Es un corte que se encuentra por encima de las costillas y debajo del matambre, es muy parecida a la tapa de asado, aunque esta ltima es una carne ms dura y por lo general se la utiliza para estofados, pero la punta de espalda es mucho ms tierna, ya que se obtiene de las costillas (y la tapa de asado del pecho del animal)
